I have learned to cook omelettes in a microwave.

Most work OK, but when I try cheese filling it vulcanises, and becomes like tough rubber.  I have tried shredded Tasty, and Cheddar.

Does anyone know a cheese that stays edible after microwaving?

Or maybe I need to try a cheese sauce rather than a hard cheese?

That's the trouble with cheese.  If it is cooked for too long at high heat it will become rubbery every time.

You could try using the defrost setting to cook it.

Maybe mozzarella (or even a Brie) if you haven't tried it.

there are a few recipes on the net but the cheese is sprinkled over the top and not used as a filling.

Muruk, you could try using smaller amounts of a stronger cheese, like crumbling parmesan or feta on top.

Good for the hips and the hip pocket.
